Home Economics: Strawberry balsamic chicken

imageI found this recipe on Pinterest and thought it sounded so good. Well, I made it last night and it is amazing! You can find the original recipe here at Gimme Some Oven. The above photo is from the Gimme Some Oven website. My version didn’t turn out quite as pretty, but it tasted delicious! It’s the perfect combination of sweet and savory with the strawberries and balsamic vinegar.

I almost followed the recipe perfectly, except I used more strawberries and I added some shaved Parmesan cheese, since I had some in the fridge. The original recipe only has six ingredients, so it’s simple and easy to make.

First, I gathered the ingredients and placed the chicken breast in a ziplock bag with the balsamic vinegar and made the caprese topping. It was so easy… Sliced strawberries, torn up basil, mozzarella cheese, and then I added Parmesan shavings. Extra cheese is always a good thing!

Then I baked the chicken breast and reduces the additional balsamic vinegar.

When the chicken was finished cooking, I put each breast in a plastic container, added the reduced balsamic vinegar and added the strawberry/basil/cheese topping. Done! Delicious!
