When I need to drop a few pounds, I always try to add more veggies to my diet. Broccoli slaw is a great base to a lot of dishes, but this chicken Alfredo recipe is one of my favorites. It so simple and there is no official recipe, since I don’t like to measure ingredients. First, I sauté the broccoli slaw in a pan sprayed with olive oil. Then I put the sautéed broccoli slaw in a microwave proof bowl, and add a light Laughing Cow cheese wedge or maybe two. I really like the garlic and herb flavored Laughing Cow cheese in this dish. Then add shredded chicken breast and heat everything for a minute or so. You want the cheese wedge to melt as it forms the “Alfredo” sauce. Stir and enjoy!
